How do fast foods plan the quantities of food to be cooked in a given day? what they do with daily left overs?

I’m just starting a fast food business (so I have no data history), what is the best way to plan the quantities of food to be cooked in a given day (or week (?)), It’s not a burgers and fries fast food, it’s an ethnic fast food so I have around 20 items on the menu. Are there any softwares for this? Do I need one?
What do fast food owners do with clean left overs that can’t be stored again? where do you include their cost in your financial plan?
